Freeze fresh herbs in trays for later use

It's been unusually warm in Missouri these past few days.

I was glad I didn't succumb to temptation earlier and clean out the garden; a number of fresh herbs are still available including rosemary, spearmint, catnip and basil.

After pulling leaves off basil stalks, washing and patting dry, I chopped leaves and filled ice cube trays.

I finished by pouring water into the tray, then putting the tray in the freezer.

Once cold, I store basil cubes in a freezer bag and use to season soups, stews and other winter hardy dishes.

One of my friends also now expects to get a supply for her fall birthday, and another one wanted some as a housewarming gift so I know these also make great gifts ideas.
